Serves about 8
8 slices bacon, cut in 1” pieces
1 lb. breakfast link sausage, cut into 1” pieces
1 large onion, cut into thin slivers
1 large red bell pepper, cut into 1” slivers
28-ounce bag tater tots
3 tablespoons Mis Rubin’s White Magic, divided
6 large eggs, lightly beaten
1 tall can (12-ounce) evaporated milk
1/4 cup spicy brown mustard
1/2 teaspoon garlic powder
1 bunch (about 4-5) green onions, diced*
2 cups grated Mexican cheese mix, divided
Preheat oven to 375F.
Toss bacon, sausage, onion and bell pepper slices together and spread out on a sheet pan.
Place in oven while preheating. Cook until sausage is just done, bacon is not yet crispy and
vegetables are tender, about 10 minutes.
Put frozen tater tots into 9x13” greased casserole dish. Toss tots with 2 tablespoons
of Mis
Rubin’s White Magic.
In medium bowl, combine eggs with milk, mustard, garlic powder, 2 teaspoons of
White Magic
and 1 1/2 cups of the cheese. Stir in most of the green onions.
Pour meat mixture over tots and gently toss to combine. Pour egg mixture over tots and bake
about 40 minutes. Scatter with remaining cheese and green onions. Bake an additional 5
minutes to melt cheese. Remove from oven, dust with remaining teaspoons of
White Magic
and let stand 5-10 minutes before serving.
