Do you have folks eating at your table that love lemon? If so, you’ll find this simple recipe to be one you’ll turn to time and again. Just keep these few pantry items on hand to fix in a flash. Enjoy this delicious chicken marinated in Mis Rubin’s All-Purpose Marinade as is, over a salad or tucked into warm pita bread, all with a dollop of creamy Greek lemon yogurt tzatziki!
Serves about 6
1 1/2 lbs. chicken tenders, tendon removed*
about 1/3 cup Mis Rubin’s All-Purpose Marinade
1/4 cup olive oil, divided
2 tablespoons garlic paste
3 lemons
about 1/2 cup fresh chopped oregano or 2 tablespoons dried
about 1 ¼ lb. small red potatoes, cut in half/1” pieces
1 large yellow onion, sliced
Mis Rubin’s White Magic
8-ounce jar herbed julienned sun-dried tomatoes in oil
4-ounce package pitted kalamata olives
2 ounces pine nuts, toasted
feta cheese, crumbled

Lemon Yogurt Tzatziki: (combine all and mix well)
1 large seedless cucumber, diced and drained in paper towel
1 5-ounce Greek lemon yogurt
1 teaspoon Mis Rubin’s White Magic
1 teaspoon lemon zest
1 tablespoon garlic paste
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh mint
Put chicken tenders in large zippered bag. Add marinade, 2 tablespoons of oil, garlic, zest of 1 lemon, 2 tablespoons lemon juice and oregano. Toss to mix and coat with marinade. ( We recommend marinating a least 3 hours up to overnight.)
Preheat oven to 425F. While heating, place baking pan in oven to heat.
Toss potatoes and onion slices with remaining 2 tablespoons of olive oil.
Once oven is hot, carefully removing baking pan. Coat lightly with oil. Scatter potato-onion mixture over hot pan. Drain chicken mixture and add around potatoes. Dust all generously with Mis Rubin’s White Magic. Bake about 25-30 minutes, tossing vegetables occasionally, and until chicken reaches 165° by thermometer.
For lightly crispy veggies, cook a couple of minutes under broiler. Remove from oven and scatter with tomatoes, olives, toasted pine nuts and cheese. Serve with lemon wedges and tzatziki dusted with White Magic.
The Tzatziki will keep for about 4 days in refrigerator, if it lasts that long!
